3 BBQ's in 3 days- day 2

Today's BBQ was actually not really a BBQ at all.  It was a pool party hosted by my Aunt Carol and Uncle Carl.  They decided it would be fun to have a 'taco bar' for the main meal.  So in attempt to stick to the theme I brought along a black bean and corn salsa.   As much as I would like to take credit for this amazing recipe I have to admit that it was one that I stole off of http://allrecipes.com/.  If you have never heard of this website you should really check it out.  It has a pretty good search engine where you can type in phrases like "easy corn side dish" and it will put up a ton of different recipes.  I have found lots of great recipes on here and I like browsing through all of the comments that people leave regarding the recipes and the variations they used when preparing the dishes. 

Here is what you will need.

 
Here is what you will need to prepare

* 1 can yellow corn
* 1 can white corn
* 2 cans black beans
* 1 medium tomato
* 1 red pepper
* 1 small red onion
* 5 green onions
* 1 small bunch of cilantro
* 1 tablespoon minced garlic
* 1 avocado
* 1 freshly squeezed lime

All you have to do is combine the above ingredients in a large mixing bowl.  You will want to let this dish chill for several hours before serving so that the flavors can all set.  I always hold off on adding the avocado until I am ready to actually serve the dish.  I like the avocados to be as fresh as possible.

Tomorrow’s recipe- my guilty indulgence.  My mouth is watering just thinking about it.
